Pearl restaurant's Jun Tanaka continues his series of cooking courses with a twist. The next event, taking place on April 29 and costing £70, takes advantage of the balmy season with the day devoted to the "Taste of Spring". Breakfast at the restaurant is followed by a trip to London's markets to select newly arrived goodies such as broad beans, peas and asparagus. Choosing with a chef's eye is the name of the game, from identifying a spankingly fresh fish to instructing the fishmonger whether and how it should be boned for the recipe in question.
With the guidance of easygoing sommelier Michael Davis, a subsequent trip to wine merchants pairs bottles with the food to come. The actual creation of the dishes is a painless affair, with everybody instructed to become "helper" and tips and tricks of the trade scattered throughout. Take home recipe cards and a full belly.
